
Do you remember the first time you saw prince charming waking Snow White with a magical kiss? Or when you bit into the final peach of the season….and you didn’t realise that it would be your last ?…. If these notions have stirred something in you, please read on….this is a recipe that resurrects dried fruits from the depths of your pantry, to blossom into plump, juicy morsels that you can eat hot or cold, as dessert, as breakfast or as a snack. And like a magical kiss they will be made in a fairy tale moment.
You can use what ever you have in the cupboard…
Great fruits to use include:
Goji berries
Peaches
Pears
Apricots
Nectarines
Raisins
Poached nuts, add protein and a great texture, (plus poaching them makes them easier to digest) think:
Almonds
Walnuts
Pecans
Cashews
Spices add a little something special:
Nutmeg
Cinnamon
Vanilla pods
Adding zest is like a beach party in your mouth in the middle of winter
Orange zest
Lemon zest
Lime zest
Mandarin zest
Grapefruit zest
I chose:
- 3 peaches
- 2 pears
- 4 apricots
- ½ handful of pecans
- 2 tbsp of goji berries
- 2 tbps of raisins
- Zest of ¼ lemon and zest of ¼ of orange
- A dash of vanilla
- 1 cup pineapple juice
- 2 cups of water
Put all in a saucepan and simmer for about 25-35 minutes
Eat warm straight away, put it in the fridge and have it with yoghurt, on muesli or as a base for bircher.
